Some of the tartness, especially of the rhubarb is mellowed, and the citrus notes become brighter. Eleven core botanicals are macerated overnight in wheat spirit, the more delicate violets are added later. Those are then distilled. This is the same foundation as Tarquin’s flagship dry gin. The British grown raspberries and rhubarb are macerated later. Originally the term “pink gin” was used to describe regular gin with a splash of angostura bitters. Nowadays, you can expect pink gins to be infused with a whole assortment of fruit, herbs and spices, including strawberries, rhubarb, grapefruit and rose petals. What does pink gin taste like? As part of our latest big gin taste test, our panel of spirits experts and gin-loving consumers tried 72 bottles, of which 22 fell into the pink gin category. Each was tried neat, and then again diluted with a small amount of water, to ensure the flavour was not impaired by any mixer.After distillation, the gin is infused with the rhubarb and raspberries – giving the gin its vibrant pink blush.
